Created in the 19th century by French chef Urbain Dubois for Prince Orloff, the Russian ambassador to France, try this month's feature to add an air of royalty and history to your dining experience

12oz veal chop with duxelles, caramelized onions, mornay sauce and black truffles, served with saffron potato purée sauce.
